Miam ! Quick fancy sandwich
Well ok it's not super fancy but it looks like it, doesn't it ?
This has become my go-to dinner/lunch/brunch when I don't feel like cooking at all.
So easy, it's ridiculous...
The original recipe is from Cooking Light magazine but here's a slightly easier and faster version of it :
You need (for 4 servings):
4 slices good country bread
2 cups fresh arugula
1 1/2 teaspoon fresh lemon juice
4 large eggs
3/4 cup ricotta cheese
1/4 cup grated parmesan cheese
1 teaspoon thyme
olive oil - salt - pepper
Step 1 : combine arugula with lemon juice + a bit of olive oil + salt + pepper
Step 2 : combine ricotta with parmesan + thyme + a bit of salt
Step 3 : fry eggs
Step 4 : spread ricotta mix over bread slices + add arugula + 1 egg per slice + a bit of salt and pepper
Voilà !! Bon appétit !
